After this tome, I consider myself eDuCAtEd.
Some parts made my eyes glaze over but that's alright - it was written by a professor, anyways.
Anyone who cares even a little about what they're eating should read this.
Not only will you learn a lot but it'll open your eyes to how much politics and big corporations are involved in what you see in your supermarket. Getting informed will make you immune to many claims these companies make.
This helped me change my relationship with food for the better, and most importantly, quelled some of the food/nutrition/nutrient deficiency worries I had due to ignorance.
I now approach eating with a more relaxed, common sense view, and makes temptations less powerful.
Because seriously, I don't want my diet to depend on my level of will power. 5 stars for sure!
