I'm halfway there. Too bad it wasn't with a better book, this one just dragged.

Country: Nigeria
It's been a while since I've found a book that took place somewhere I hadn't already been, and interestingly enough, this one was very similiar to the last two books I "traveled" with: The Last Leopard and Guardian of the Dead.
Akata Witch by Nnedi Okorafor

Country/Territory: Falkland Islands
I know we didn't have to visit Antarctica, but since it so rare to find a book that does take place there, I just couldn't pass up a visit. And the book I read took place part in the Falkland Islands also, so I figured combining the territory with the unnecessary continent ought to count as one visit to a country. Hope that's ok.
Troubling a Star by Madeleine L'Engle

Country: Dominican Republic
Poison Makers by Jimmy Olsen
Been a while since I've "been" somewhere new, and this book could have counted for my first visit to Haiti, too, but since more of it took place in the Dominican Republic I decided to count it for that instead.
