Clotted Cream Chocolate Mousse

I've uploaded recipes on how to make chocolate. But what if you want to do more with your chocolate? Well here's the first in my series of recipes on filled chocolate.

Being Cornish, I felt it would be a crime to make chocolate mousse with anything other than clotted cream. Fortunately, this local staple is incredibly special, so very little else is needed to create a wonderful chocolate filling.

How to Make Vegan 'Milk' Chocolate

My upcoming recipe book will include chocolate recipes for people with a variety of dietary requirements. All of my recipes are vegetarian, but I've also included alternative versions of milk, white and plain, for those who wish to avoid honey and dairy.

This milk chocolate substitute uses a blend of cashew and coconut butters for a creamy taste, and agave nectar for sweetness. It is exceptionally delicious.

Homemade Milk Chocolate Recipe

Although I found a handful of recipes for homemade milk chocolate online, none of them quite worked. They were always either gritty or the ingredients separated in the moulds. In my upcoming book, , I will share lots of secrets on making the perfect, smooth milk chocolate. For those of you who can't wait, here's the basic recipe.

Vanilla Chips - How to Prepare and Store Vanilla for Home Chocolate Making

My first is how to prepare and store vanilla seeds, so that you don't have to keep scraping them from a pod every time you want to make chocolate.
