For me, I kept thinking back to Not If I Save You First by Ally Carter when I read Hatchet. It has a similar trying to survive in the wilderness thrill but is set in Alaska with spies, Russians, girl power, and teen drama, and personally, I enjoyed it more. There's also Thirst by Jill Williamson, just instead of trying to survive the wilderness, it's set in an apocalyptic version of America where all water sources have become polluted and have killed most of the population and a group of teens has to survive on their own.
