The author wrote the dialogue of the book in the dialect of whoever was speaking. So it is written in a way that if said out loud would most likely sound like how they were actually speaking ( a la Mark Twain's Huckleberry Finn. )

The book was written with a southern accent, and the dialogue in the book was supposed to fit whoever the chapter followed.

It’s written in the perspective of the maids. sadly these women were not as educated as their white counterparts. You can tell by how the grammar changes in quality when we read from Skeeters point of view as she was educated. Also it was written in a southern accent so as we read we can clearly visualise how these women would sound in reality.

Well, I have the same feeling while reading this book at the beginning (since my mother tongue is Mandarin Chinese), but later I found out the author is trying to portray the real-life situation of the way they speak English, in order to make the entire scene more realistic.
